  • 110g rolled oats
  • 65g coarsely chopped dried figs
  • 25g coarsely chopped almonds
  • 35g sunflower seeds
  • 150g mashed ripe bananas
  • 85g smooth peanut butter
  • 2 tablespoons honey
  • 2 large egg whites
  • 100g fresh blueberries
  • 1 tablespoon flax seeds
  • 1 tablespoon sunflower seeds

  1. Preheat oven to 180 C / Gas 4. Line a 20cm square baking tin with baking parchment, leaving 2.5cm of parchment hanging over the sides.
  2. Mix oats, figs, almonds and 35g sunflower seeds together in a bowl.
  3. Stir bananas, peanut butter and honey together in a saucepan over medium-low heat until completely melted and smooth, about 5 minutes. Remove saucepan from heat.
  4. Whisk egg whites together in a bowl until foamy. Mix banana mixture into egg whites and whisk until smooth; add oat mixture and stir until well combined. Fold blueberries into mixture. Press the mixture into the prepared tin; top with flax seeds and 1 tablespoon sunflower seeds.
  5. Bake in the preheated oven until golden, about 30 minutes. Cool completely before cutting into squares or bars.

Great healthy snack! I used the recipe as a good foundation to substitute my favorite add-ins. Very versatile. I used dates and almonds. Made this around the holidays so I added 1 tsp of pumpkin pie spice to add another dimension of flavors. This recipe keeps me satisfied and less likely to indulge in unhealthy snacking.-24 Dec 2015

Lots of good stuff in here! Not your grab-n-go breakfast bar, but very moist from the bananas and loaded with flavor. The fresh blueberries held their shape pretty well in the bars, so they'll pop in your mouth. I used sunflower kernels instead of seeds (it's what I had on hand), but otherwise followed the recipe. In the future, I might try cutting back on the mashed banana a bit, maybe 1/4 cup, to see if that'll firm them up a bit because I'd prefer a bar that I don't have to eat with a fork (although some might say it's worth the effort!). I cut into 12 bars rather than 9, and I would make these again. Thanks for a new breakfast treat.-23 Aug 2015

So Yummy! I made these for my toddler so I did some things differently. I did not use figs, and I used ground flax feed. I used frozen blueberries because that's what I had. I also added some chocolate chips on top. They are so delicious! Some one mentioned they made them into muffins, I think I might try them as mini muffins next time!-17 Jan 2019


Ingredients

1 (12.4 ounce) can Pillsbury ® refrigerated cinnamon rolls with icing
8 Nature Valley ® banana nut crunchy granola bars (4 pouches from
8.9 ounce box), crushed (1 1/2 cups)*
4 eggs
3/4 cup fat-free (skim) milk
1 (14 ounce) can fat free sweetened condensed milk (not evaporated)
3 medium bananas, cut into 1-inch pieces
1 (10 ounce) bag frozen blueberries, thawed
1 (7 ounce) aerosol can fat-free whipped cream topping


● Preheat oven to 350°.
● Line an 8” x 8” pan with aluminum foil. (You may alternately grease well if you prefer not to use aluminum foil.
● In a large bowl, fold together quick oats and fresh blueberries.

● Add in banana, egg and brown sugar mix well.

● Press the mixture into the prepared pan.
● Bake for approximately 25 – 30 minutes in a preheated 350° oven, or until the bars have slightly browned on top.
● Remove from the oven and allow the blueberry banana oat bars to cool in the pan.

● Cut blueberry banana oat bars into 8 portions.
● Eat on the go, or freeze individually for busy mornings!

● 1 Egg
● 2 TBSP Brown Sugar

What are Banana Oat Bars?

These Blueberry Banana Oat Bars are a cross between oatmeal and a muffin. They are highly portable and completely make ahead, ideal for a grab-and-go healthy breakfast.

Firstly, mash your overripe bananas in a large bowl. Then stir in the brown sugar and egg. This recipe calls for only a 1/4 cup of brown sugar, but you could keep it out entirely if you wanted. Also, you could substitute maple syrup for an equally delicious bar.

Next, stir in the remaining ingredients and pour half the batter into a greased 8 x 8 or 9 x 9 inch greased baking pan. Sprinkle on the blueberries then cover with the remaining batter.

Let the bars cool before cutting and refrigerating. Alternately, you can freeze them in an airtight container for up to two months.

Vegan Coffee Cake is the key to happiness

I’m not wrong, am I? There’s something about eating cake for breakfast that feels so indulgent, but this vegan blueberry coffee cake is a little more wholesome, packed with nutrients from the blueberries, and still tastes just as fabulous. I love the pop of color the blueberries give this vegan breakfast recipe, making it perfect for a special Mother’s Day brunch but easy enough to make as a weekday breakfast meal prep.

I call these coffee cake bars because I prefer my coffee cake in “snackin” form, meaning it is dense enough to eat with your hands. Who has time to use utensils anyways?! Just kidding, we do use utensils around here, but it feels so fun to eat breakfast with your hands! I love the moisture that the bananas bring to this coffee cake without making it too banana-y. Toss in some fresh blueberries, and you’ve got yourself a beautiful yet easy breakfast or brunch recipe.

Blueberry Banana Oat Bars

I’m so excited about this recipe for Blueberry Banana Oat Bars. I’ve been wanting to add some new healthy “treat” snacks to my children’s lunchbox rotation because I’ve been stuck on muffins for a while.

Store-bought granola bars, even the organic ones, are so full of sugar and other unnecessary ingredients and preservatives. They also tend to be expensive and over-packaged.

These oat bars are simple to make and they cost a fraction of what you’d pay for granola bars at the grocery store (see price comparison here). The flavor of these bars is so delicious. They don’t last long in my house!

These blueberry banana oat bars are soft and fruity. Let them cool completely before cutting into bars, or else they may fall apart a bit. Store at room temperature, or freeze for later.


Quick & Easy Blueberry Banana Breakfast Bars


Banana-sweetened, and studded with sweet-tart blueberries, these breakfast bars are put in the oven in a flash, and feed a crowd. Delicious heated up the next day as breakfast again, or cut into squares and placed into lunchboxes, this is sure to be a new family favorite!

I like to place the blueberries on top so they burst and form a topping, but you can also mix them into the coconut flour batter gently before pouring it into the pan.

You’ll see I use parchment paper here- It’s not necessary but it makes cleanup a snap. If you don’t use parchment, just grease your baking dish well with coconut oil before pouring in batter.

You know that feeling when you run out of breakfast ideas. Well, it happened to me last week. Honestly, I got tired of muffins, fruit smoothies, chia puddings and eggs. Even overnight oats and grits with milk that I love so much. I needed a change. Some different breakfast.

Blueberries are now totally in season, and recently I got the first bunch of locally grown raspberries. It didn't take me long to find the idea and to make this ultimate super Berry Banana Breakfast Oat Bars.

To make this Berry Banana Breakfast Oat Bars I used oats which are not only super nutritious but like superfood for our body. Oats are among the healthiest grains on earth. Yeah! Super cool! They are a gluten-free whole grain and a great source of high-quality water soluble fibers, which is why they are so healthy. Also, oats are rich in plant-based proteins and many vitamins and essential minerals like magnesium, calcium, potassium, selenium.

Oats and oatmeal have many health benefits. These include weight loss, lower blood sugar levels and a reduced risk of heart disease. I LOVE oats for that. I really do. I use oats for making apple cinnamon and carrot cookies that we love so much and in daily cooking.

In addition to oats, which are the main star in this Berry Banana Breakfast Oat Bars, I also used a ripe banana. The banana added up nutrients but also joined the whole mixture nicely. Also banana sweetened the mixture, so this Berry Banana Breakfast Oat Bars contains little added sugars.

On oat-banana base I decided to put chia jam made from fresh raspberries that my friend Marina gave to me the other day. She's my main raspberry dealer, and thanks to her I did make that beautiful Lemon Raspberry Loaf Cake that was huge hit last summer.

Ok, so you maybe noticed. I'm a HUGE fan of chia seed jam made with fresh fruits. I started last summer with blackberry chia jam and that last week I made that amazing cornbread with sour cherry chia jam. Yes.. I said.. I'm a huge fan. A bit obsessed even.

For this Berry Banana Breakfast Oat Bars, I used raspberry chia seed jam. Homemade, of course, and made with FRESH raspberries. Raspberry chia jam enriched this bars with more proteins, fibers but also with healthy omega-3. I couldn't resist so I added some blueberries too. So with this beautiful berry combination, I got a perfect summer dessert that can be served as breakfast, snacks or with the cup of favorite afternoon coffee.

Blueberry Banana Breakfast Cookies (vegan, gluten-free)

I never thought I would consider giving my kids cookies for breakfast! That is however, before I developed my version of the perfect breakfast cookie, which is nutritious, filling and delicious. It’s great for mornings when you just don’t have the time.

There are many days when I am rushing through the morning with my kids, wondering if I’ll ever make it out the door on time. I typically eat a few almonds before my workout every morning, with the intention of having a proper breakfast when I get back. However, with all the morning tasks, the ONE thing I often don’t get around to (although arguably one of the most important) is my own breakfast. I am usually starving soon after I get out of the house, especially after a tough workout.

These breakfast cookies are a life-saver! I initially developed the recipe with the intention of giving them to my kids if we we are ever late in the morning, or on travel, but I found them to be much more useful. I never skip breakfast when I have them on hand. I just pop them in the microwave for a few seconds and take them with me. It’s like eating dessert for breakfast, without the guilt! My kids and I love them so much that I can easily use them as a typical cookie (which is secretly very nutritious). Even my sugar-loving husband enjoyed a few of them!

When developing this recipe, I tried to keep the flavors and ingredients similar to our morning oatmal, which I usually make with fruit and cinnamon. Although I’ve only tried this recipe with blueberries, you can easily replace them with other fruit such as strawberries.

Serve these healthy cookies for breakfast, as a snack, dessert, or an addition to your toddler’s lunch. They are delicious and have helped fuel my body in the morning for the rest of the day.
