I took out the cherries and put them with sugar.
I smashed the cheese with a fork. It does not need to be mashed very finely. I put the lemon peel and vanilla in the cheese.
I separated the yolks from the egg whites.
I mixed the butter very well with the powdered sugar, then I added an egg yolk, mixing well after each one.
I then added semolina, pudding powder mixed with baking powder.
I mixed the egg whites very well with a pinch of salt and I added the 50 g of sugar.
I put the cheese over the butter cream, stirring with a spatula, and then I lightly incorporated the egg white foam.
I put the composition in a 33x25 cm tray lined with baking paper.
Over the counter I put the cherries drained of syrup and the rest of the fruit.
I put it in the oven at 180 degrees for 30 minutes.
I let it cool and in the meantime I prepared the cream.
I mixed the fruits with the gelling sugar and let them boil until the mixture decreased and thickened.
With gelling sugar it only takes a few minutes, if you use normal sugar, it will take a little longer.
I let it cool.
Meanwhile, I melted the white chocolate on the steam bath, then incorporated it into the fruit sauce.
I left it in the fridge to harden.
I cut the top in half lengthwise, put a layer of cream and covered with the second top.
Over the second countertop I put the cream again and over this melted white chocolate.
I left it in the fridge for another hour, then I served it.
