  1. Preheat the oven to 180 C / Gas mark 4. Grease and flour two 23cm (9 in) round cake tins or one 23x33cm (9x13 in) tin.
  2. In a medium bowl, cream together caster sugar and 125g butter. Mix in eggs and 3 mashed bananas.
  3. Sift together flour and bicarbonate of soda in a separate bowl. Add to the creamed mixture alternately with buttermilk, mixing well after each addition. Blend in 1 teaspoon vanilla extract. Fold in 125g of pecans and 75g coconut. Pour batter into prepared tins.
  4. Bake 45 to 50 minutes in the preheated oven. Cool completely before icing with Banana Nut Icing.
  5. To make the icing: Cream together 125g butter and icing sugar until light and fluffy. Mix in 1 medium mashed banana, 125g pecans, 75g coconut and 1 teaspoon vanilla. Use to ice the cooled cake.

Altered ingredient amounts.After reading the review about this cake being too sweet and heavy, I altered the ingredients and it was a winner. Coconut Cake

Grease bottom and sides of 3 (9-inch) round cakepans line bottoms with wax paper. Grease and flour wax paper.

Drain pineapple, reserving 3/4 cup juice. Remove 1/4 cup reserved juice for Cream Cheese Frosting, and reserve crushed pineapple for Pineapple Filling.

Beat butter at medium speed with an electric mixer until creamy gradually add sugar, beating well. Add eggs, 1 at a time, beating until blended after each addition.

Combine 1/2 cup reserved pineapple juice and soft drink. Add flour to butter mixture alternately with juice mixture, beginning and ending with flour. Beat at low speed until blended after each addition. Stir in extracts. Pour into prepared cakepans.

Bake at 350° for 25 to 30 minutes or until a wooden pick inserted in center comes out clean. Remove from pans immediately cool on wire racks.
Spread 3/4 cup Pineapple Filling between cake layers and remaining filling on top of cake. Spread Cream Cheese Frosting on sides of cake pipe border around top, if desired. Sprinkle with coconut. Garnish, if desired.

For lemon-lime soft drink, we used 7-Up. Its specific level of carbonation makes the layers rise beautifully.

To make this whole-grain cake fluffy and tender, I switched from whole wheat flour (too dense) to a mix of white whole wheat flour and whole wheat pastry flour (both are 100% whole wheat but made with white wheat berries, so they’re lighter in flavor and texture).

Look for those flours at a well-stocked grocery store, either in the bakery or health section. Trader Joe’s sells white whole wheat flour.

You can substitute all-purpose flour for the pastry flour if you can’t find it. Actually, you could make this cake entirely with all-purpose flour, if that’s all you have on hand.

Tip: How to Measure Flour

For best results, it’s important to measure your flour properly. Here’s how to measure flour in cups using the “spoon and swoop” method:

  1. Gently stir your flour with a large spoon to loosen it up.
  2. Spoon the flour into your measuring cup (don’t scoop it in!).
  3. Level off the excess with a butter knife.

*You can use a food processor to mash the bananas.

Pineapple Banana Cake with Coconut Frosting

2 1/2 cups all-purpose flour

1 1/2 teaspoons ground cinnamon

1 (20 ounces) can crushed pineapple, undrained

2 teaspoons vanilla extract

1 stick butter or margarine or 8 tablespoons or 1/2 cup, melted

3 bananas, peeled and cut into small pieces ( I just take a knife and cut into pieces about the size of a dime)

Combine flour, sugar, baking soda, and cinnamon in a large mixing bowl. Mix well with a wire whisk. Pour pineapple into a smaller bowl, add vanilla extract, melted butter and eggs. Add bananas to pineapples mixture and mix with a spoon. Add the pineapple and bananas to the dry ingredients and mix well with a spoon. Pour into a sprayed 9 x 13 baking dish and bake in preheated 350 degree oven for 40 to 45 minutes until cake is brown on top and tests done. Frost with icing of your choice or the coconut frosting below.

Coconut Frosting

1 (12 ounces) can evaporated milk

1 stick butter or margarine

1 cup nuts of your choice (I used walnut pieces)

Combine all ingredients but the nuts and bring to boil on top of the stove. Stir to keep from burning. Boil about five minutes until thickens. Remove from heat and fold in nuts. Let stand about 10 to 12 minutes before putting on the cake.

Note: If you live in a hot climate, you should refrigerate this cake after a day. This cake is good with cream cheese frosting, too.
