Tools to Help You Cook

  • 1 cup homemade or store-bought low-sodium chicken stock
  • 1 (.25 ounce) packet powdered gelatin (about 2 1/2 teaspoons)
  • 4 whole chicken legs, split into thighs and drumsticks (about 2 pounds)
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon vegetable oil
  • 1 large yellow onion, thinly sliced (about 1 1/2 cups)
  • 1 red bell pepper, thinly sliced (optional, see note)
  • 1/4 cup (1 ounce) high quality Hungarian sweet paprika (see note)
  • 1 bay leaf
  • 1/2 cup sour cream, plus more for garnish
  • 1/2 teaspoon Asian fish sauce
  • 1 teaspoon juice from 1 lemon
  • Minced fresh parsley leaves or dill (optional)
  • Egg noodles, boiled potatoes, or spaetzle for serving

Pour chicken stock into a 1-cup liquid measuring cup and sprinkle gelatin over the top. Set aside.

Season chicken pieces generously on all sides with salt and pepper. Heat vegetable oil in a large straight-sided sauté pan or a Dutch oven over medium-high heat until lightly smoking. Add chicken pieces skin-side-down in a single layer and cook without moving until deep golden brown, about 8 minutes. As the chicken pieces finish browning, flip them over and cook until the second side is light golden brown, about 2 minutes longer. Transfer chicken to a large plate and set aside. Pour off all but 1 tablespoon of fat from pan.

Add onions and bell peppers (if using) to the pan and cook, stirring and scraping up any browned bits from the bottom, until the onions are tender and just starting to brown, about 5 minutes. Add paprika and cook, stirring, until fragrant and nutty, about 1 minute.

Add stock/gelatin mixture and scrape up anything stuck to the bottom of the pan, stirring constantly. Add bay leaf. Nestle seared chicken pieces back into the sauce, leaving them skin-side up. Reduce heat to lowest setting, cover pan, and cook until chicken is completely tender, about 30 minutes.

Remove chicken pieces and set aside on a large plate. Whisk sour cream, fish sauce, lemon juice, and half of minced parsley or dill into sauce. Season to taste with salt and more paprika if desired. Return chicken to pan and turn to coat in sauce.

Serve immediately over noodles, boiled potatoes, or spaetzle, tossing the noodles or potatoes with the sauce and placing the chicken on top. Garnish with more sour cream, paprika, and minced fresh parsley or dill (if using)

Learn to Import Recipes From Anywhere on the Web

Unless you plan on manually typing hundreds of recipes into Paprika, you’ll want to get the hang of the various ways you can import recipes into the app. Paprika is smart enough to parse out the seemingly endless personal essay at the start of a recipe and convert the ingredients and directions automatically. You have three main ways to do this.

On iPhone, Paprika includes a share extension that simplifies adding a recipe from Safari. When you’re reading a recipe in Safari, tap the share button, then Paprika. This imports the recipe into Paprika automatically.

You can also copy and paste a URL into Paprika. Copy the full of address of any recipe, then open up the Paprika app. Paprika is smart enough to recognize a URL on the clipboard so it’ll automatically ask if you want to import it.

Finally, you can also import recipes from your desktop browser using the Paprika bookmarklet. If you haven’t already, you first need to create a free Paprika cloud sync account . Then, head to the bookmarklet page , enter your email address and password, then follow the onscreen instructions to set it up. Once you do, you can click the bookmarklet to add any recipe to Paprika from your desktop browser.

Organize Your Recipes Into Categories You’ll Actually Use

After you add a recipe, the next logical step is to categorize it. There’s probably some logical, recipe book style means of organizing all of these, like Pastas, Appetizers, Sides, etc, but I’ve found that I don’t actually those traditional systems.

Instead, I use categories like time (15 minutes, 30 minutes, slow cooker), where I got it from (friend, blogs, or recipe books), or special events (Christmas dinner, Super Bowl, etc). That’s what works best for me, so your mileage will vary, but don’t be afraid to think a little outside the box when you create categories. Build a system that makes sense and works for you.

Paprika Recipe Manager: How it works

Unfortunately, Paprika does not come with any preloaded recipes, which is unlike most of the best recipe software we reviewed. For instance, Shop'Cook Menu 3.4.3 comes with more than 70,000. However, you can easily import recipes you love or just want to try into this cookbook software &ndash and it's easy to use, making building a personalized recipe collection a quick and painless process. You can search through thousands of online recipes directly from the software itself. Once you find something you think looks good, you simply add it to your Paprika collection. This program also has the capability to share and print recipes with the push of a button, so you and your friends can engage in an updated version of the traditional recipe swap beloved by cooks for generations.

Other Cooking Options

Slow cooker

Combine the sauce ingredients plus the oil in a bag with the chicken drumsticks and shake to coat evenly. Line the bottom of your slow cooker with sliced white onion and spread the chicken over top. Place the lid on your slow cooker and cook on HIGH for 2 – 4 hours.

Pressure cooker

Insert a cup of water or chicken broth into the pressure cooker and place the provided trivet on top. Place the sauce ingredients and the drumsticks in a bag and shake well to ensure the chicken is fully coated, place the chicken over the trivet and close the lid according to manufacture guidelines. Cook on manual HIGH for 15 minutes before allowing the steam to release naturally and serve the chicken hot.

Recipe Summary

  • 1 whole roaster chicken (6 to 7 pounds) , rinsed and patted dry
  • 1 tablespoon softened butter
  • 3 tablespoons paprika
  • 1 1/2 teaspoons coarse salt
  • 1 1/2 teaspoons dried thyme
  • 1/4 teaspoon cayenne pepper

Preheat oven to 375 degrees. Tuck the wings under the chicken tie legs together with a piece of kitchen twine. Rub with butter.

In a small bowl, combine paprika, salt, cayenne, and thyme. With dry hands, sprinkle chicken with spice mixture don't rub. Place chicken in a cast-iron skillet.

Bake until coating is blackened, 30 to 45 minutes. Tent with foil continue cooking until an instant-read thermometer inserted in thigh (avoiding bone) registers 165 degrees and juices run clear, about 1 1/2 hours. Remove chicken, and let stand 5 minutes before carving. Pour pan juices into a glass measuring cup skim fat from top. Strain, and serve sauce with chicken.

Oh She Glows

One of the few paid-for apps in this list is also, naturally, one of the most polished. Oh She Glows is a great companion for anyone who is either vegan or fancies dabbling in some tasty, plant-based recipes. The app is an extension of the popular blog of the same name, which dates back to 2008 and has produced several cookbooks.

You don’t get quite as many recipes as the website – at the time of writing the app has 161 recipes – but there’s plenty of variety, from pumpkin chocolate muffins to cauliflower Thai curry. The photography is high-quality and consistent, and the recipes have a personal touch too thanks to being written in first-person by the blog’s founder Angela Liddon.

It’s four o’clock in the afternoon, what are you cooking for dinner?

Last week I wrote about the importance of meal planning and how adding a little bit of organization to your week can take the pressure off the late-afternoon rush to prepare a family meal. I’m going to admit right now, I’m not a very good menu planner but I’m willing to try and get better.

Personally, I like to look in the refrigerator and freezer to see what’s on hand and then come up with something at the last minute. This drives my wife crazy.

She is very organized and likes to look through one of my current cooking magazines, find a few meals that look interesting, and prepare a shopping list to use at the market. This way we know exactly what we’re going to eat each night of the week.

This is a much more efficient way to plan a weeks worth of meals and I have to admit it reduces the stress of coming up with something to cook at a moment’s notice. If only there was an app that could help me get organized!

Turns out there are plenty of them and I’ve tried quite a few but one of the most useful meal-planning and food-organizing apps I have come across is called Paprika, which allows you to easily manage your recipes and meals from your desktop computer, iPad, iPhone and now Android. And they all can be synced together in a “Cloud”.

When using Paprika, you avoid the uncertainty about what to cook for dinner, you save money when you visit the grocery store, and your ingredients and meals are organized ahead of time so that you are confident and well-prepared in the kitchen when dinner time rolls around.

And how cool is it to have all your favorite recipes on hand wherever you go? Take a look at the features Paprika offers—it may be an extremely useful application for at-home cooks to purchase and download.

Paprika Recipe Manager Features

So, you have no idea what to make for dinner for the week. The natural place to search for meal ideas is online. You know that your daughter has been craving chicken Parmesan so, to start, you browse the web until you find a suitable recipe.

Recipes and Meals If the web recipe you find is micro-formatted (and most big-name cooking websites are), all you have to do is hit “save” in the upper right hand corner of the page, and your chicken parm will appear on the “Recipes” homepage of your Paprika account.

For Tuesday night you find a nice tofu stir fry option from Martha Stuart beef wellington for Wednesday found on Reluctant Gourmet penne pasta with Bolognese sauce for Thursday taken from your grandmother’s recipe book—you get the idea.

After all your recipes have been either automatically saved or manually entered, they will appear on the recipe page and laid out in a meal-calendar that you have built for the entire week. Congratulations, you now have at least a loose idea of what you’re going to put on the table for dinner!


Paprika goes well beyond simply laying out your desired meal choices. The application allows you to categorize your meal choices and archive them, so that different recipes can be easily found in the future. For example, create a category for Italian dishes, seafood, vegetarian meals, sauces, pastas, and salads—the list is endless.

The application comes with a few basic categories already listed, but you can add as many of your own as you want. Your chosen meals for the week can also be organized as either a breakfast, lunch, dinner or snack.

Ingredients and Grocery List

One of the best parts of Paprika is its ability to create a grocery list for you to use the next time your shopping for meals. You can click on a specific meal and add it to your “Groceries”, so that all the necessary ingredients appear in an items list on the bottom toolbar.

From there, you can go through the list and check off items that you already have in the house, so that the only ingredients that appear are the ones you need to buy at the store.

After you have created and edited your grocery list, the application allows you to either email the list to your smart phone, print out a hard copy, or cloud sync it to another application location.

I prefer to have the list printed out so that I don’t have to walk around the grocery store looking at my phone, but it’s up to you which option you prefer.

Have all Your Favorite Recipes at Your Fingertips

My favorite part of this application is that you can access all your favorite recipes from a variety of sources in one place.

You can search these recipes easily by category and continue to use them for future meals. Instead of lugging around a recipe book, you can bring your iPad into the kitchen with you or just pull up the app on your computer if you have one nearby. I like being able to bring all my favorite recipes with me when I’m traveling or on vacation.

Extra Features

After you have gone shopping and prepared your meals, you can delete recipes from your meal calendar or keep them archived in your chosen categories. You can also add notes to the recipes, rate them or manually, and edit any information you want. Furthermore, you can change the size of a recipe to serve any number of people, and your ingredients will automatically adjust accordingly.

The Paprika app may seem a little pricey: the desktop version costs the most and is around $20 while the iPhone IOS, Android, and iPad application is about $5. This may seem a bit expensive but if you think about the cost of purchasing one cookbook (which could be up to 40 bucks), you are actually saving a lot of money.

This is a cookbook that you have created yourself using your favorite recipes, and it’s something that you can continually update and edit.

Think about it. You can create your own electronic cookbook with thousands of recipes you find on the Internet. If you add a recipe and it doesn’t work out as well as you hoped, delete it and find one that’s better.
I’ve been adding some of my “as good as it gets” recipes from The Reluctant Gourmet web site to my Paprika but I also have dozens of others from some of my favorite websites.

  • 1 chicken (3 1/2 to 4 1/2 pounds, quartered, or chicken parts)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1 tablespoon paprika (Spanish smoked)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon brown sugar
  • 1 clove garlic (finely minced)

Line a roasting pan or jelly roll pan with foil.

Arrange chicken, skin side up, on the baking pan.

Sprinkle lightly with salt and pepper.

Combine remaining ingredients.

Rub the paste over the chicken pieces.

Roast, uncovered, for about 50 to 60 minutes or until an instant-read thermometer registers 165 F when inserted into the thickest part of a thigh. Juices will run clear when the chicken is pierced with a fork.

Remove the chicken to a serving platter.

Cover loosely with foil and let stand for 8 to 10 minutes before serving.
