Homemade burgers

Mix all ingredients. Cover and refrigerate for 30 minutes. Remove and form burgers with breadcrumbs (a composition ball flattened in breadcrumbs on the back).

They are placed on the well-heated ff grill on both sides (I have a cast iron grill).

It looks perfectly like meatballs, only they are made without a drop of oil! THEY ARE MUCH HEALTHIER!

Then I put them in buns with a teaspoon of mayonnaise / ketchup, a slice of tomato, salad, optionally everyone wants. F gustosti!


  • 500g minced pork
  • dried herbs (sage, thyme, oregano, etc.)
  • a small, chopped onion
  • 2 cloves of minced garlic with the press
  • bread crumbs soaked in milk
  • 4 digits
  • a heart of lettuce
  • slices of bacon
  • slices of tomatoes
  • cucumber slices
  • onion rings
  • 300 ml tomato paste
  • 150 ml of water
  • 1 chopped onion
  • 1 tablespoon mustard
  • 2 tablespoons sugar
  • 1 tablespoon sweet or hot paprika
  • 1 tablespoon of vinegar
  • salt pepper
  • half a small cabbage
  • 2 carrots
  • 2-3 tablespoons of cream
  • a tablespoon of vinegar
  • french fries

Put all the ingredients together in a saucepan (300 ml tomato paste, 150 ml water, 1 chopped onion, 1 tablespoon mustard, 1 tablespoon sugar, 1 tablespoon sweet or hot paprika, 1 tablespoon vinegar, salt and pepper), which we leave on low heat for about 20-25 minutes, until the liquid is reduced and everything turns into a thick sauce.

Using a food processor, chop the cabbage and grate the carrots. Then mix everything with cream, vinegar, sugar, salt and pepper and leave the salad aside until ready to serve.

Mix the minced meat with the onion, the crushed garlic with the press, the aromatic herbs, the salt, the pepper and the bread crumbs, then from the composition we form the meatballs of a size suitable for the buns we will use for the burgers. Heat a grill pan and brown the burger meatballs on one side and on the other. If we want, we can grease them with mustard from time to time.

While the meatballs are being made for burgers, we can also prepare the potatoes for frying, dipping them in an oil bath until they become golden and a little crispy. When they are ready, we take them out on kitchen paper to absorb the oil. In another pan, brown the bacon slices.

We cut the buns in half. On the bottom of the bread we put a teaspoon of sauce, continue with a green lettuce leaf, meatball, bacon, cucumber slices, tomato, onion and the second half of the bun.

We fix the burger with a bamboo prick and serve it on a wooden support, along with the homemade sauce, coleslaw salad and, of course, for a weekend treat, golden potatoes and crisps.

Burgers are by far our favorite choice when it comes to fast food. Precisely for this reason, we thought that burgers prepared in our own kitchen are a much healthier and maybe even tastier option.

  • 500 grams of minced meat, a mixture of pork and beef
  • 6 slices of bacon
  • salt pepper
  • sweet ketchup
  • sweet mustard
  • 2 large red onions
  • 6 slices of cheese
  • 6 hamburger buns
  • mayonnaise
  • 3-4 pickles
  • iceberg lettuce or lettuce, classic

The minced meat is mixed with a tablespoon of ketchup, a tablespoon of mustard, half a teaspoon of salt and pepper.

Form 6 burgers and leave in the fridge for at least an hour. Meanwhile, the other ingredients for the burgers are being prepared. Cut the onion into rounds and mix with a pinch of salt, pepper and a teaspoon of white wine vinegar, then set aside.

The salad is cut or broken and mixed with 5 or 6 teaspoons of mayonnaise, until a creamy salad is formed. In turn, the cucumbers are cut into rounds and the buns in half.

Fry the bacon slices in the pan, on both sides, and leave on a plate. After all this preparation, heat a Teflon pan or an electric grill and put the burgers. Leave each for about 2 minutes on one side, until golden brown, then turn on the other side and grease with mustard. Leave to fry for another 2 minutes, then turn and serve with mustard on the other side.

Leave it on the fire for another minute, and add the cheese on top, then remove the burgers on the plate. Heat the halves of the buns a little in the pan, then take them out and assemble the burgers.

On the base of the bun put a little green salad with mayonnaise, bacon, a burger, then add onion salad, pickles and on top close with the lid of the bun, which is greased with a little ketchup on the inside. The burgers are served hot, possibly with a tomato sauce or french fries.

BURGER'S COOKING

I used two pans in parallel, one made of cast iron for meat (my pan of serious steaks, reaches higher temperatures) and one of Teflon to fry bacon and bread.

6. Heat the meat pan (or grill, as you like) over medium heat and place the meat in it without oil or butter. Cook for about 1-2 minutes (depending on how you want the meat to come out, medium or well-done, and how thick you made the meatball), then turn it on the other side. When you turn it over, place two halves of slices of emmentaler on each piece of meat so that it will melt over the meat. Keep it on the fire for about a minute or two and that's it.


7. Put the bacon slices in the other pan, still without any oil or butter and still over medium heat. It will melt from the bacon fat. Don't fry it too hard, the idea is not to be cruel. Using pliers or a fork, turn it on the other side and fry it a little more, then take it out on a napkin to drain the fat. The bacon will harden and become slightly crispy, handle it carefully after this time.

8. After you have cooked the bacon, quickly wash the pan and fry the bread (you don't want to do this in the oil and the burn generated by the bacon, it will give it a nauseating taste), possibly with the fire to the maximum. The bread should not be toasted hard, it is basically fresh, enjoy it, but just enough to harden the core a little where you cut it and get a reddish color on the edges.

If you do these three operations in parallel, the bacon and bread will probably be ready with the meat. Now all you have to do is assemble the burger.


Homemade buns and small meat buns

Mix the yeast with the sugar and 50 ml of lukewarm water. Do not be hot or hot. Be about a degree or two warmer than body temperature.
Stir and leave until the yeast "grows", then add in a larger bowl over the flour mixed with salt.
Stir, then add the remaining 150 ml of lukewarm water and egg, kneading the dough.
Then add the butter and knead a little more, until you manage to make the dough like a ball, and the dough comes off the bowl and hands. Then cover with a towel and leave in a warm place, leavened, for an hour and a half.

Bun recipe, I made 1/2 portion and I didn't grease them with milk and I didn't sprinkle them with seeds, it's everyone's option to do it or not.


Tuna burgers with garlic

Another option is to prepare Atlantic Blue Fin tuna burgers.

Necessary ingredients

  • 300 grams of Atlantic tuna fillets
  • 2 eggs
  • 1 clove of garlic
  • Breadcrumbs (required quantity)
  • The juice obtained from half a lemon
  • Ginger (optional)
  • Salt and pepper (to taste)

Method of preparation

  1. Clean the tone well if you haven't already bought it cleaned. Make sure it's well deboned.
  2. Cut the tuna fillet into small cubes. The smaller the cubes, the better. Add salt and pepper to taste and set aside the fish.
  3. Peel a squash, grate it and squeeze the garlic. The easiest way to do this is to put it inside a jar to shake. The peel will peel off quickly! Then chop the garlic finely.
  4. Mix the tuna with the chopped garlic.
  5. Add eggs, ginger and lemon juice. Stir well.
  6. Add the breadcrumbs slowly until you get a firm but malleable dough.
  7. Let the dough sit in the fridge for at least 40 minutes. In this way, the flavors will penetrate the fish meat.
  8. Take the dough out of the fridge and prepare the burgers as I explained in the previous recipe.
  9. Grill tuna burgers, then serve them with salad or home-made buns with seeds.
